Harissa originated in the small North African country of Tunisia, and today is often referred to as the national condiment of Tunisia. Its popularity has spread to other North African countries including Libya, Algeria, Israel, and Morocco. It is often served with meat and fish dishes, used as a rub or mixed into grains, soups, and stews.
