It takes its name from the dish, Colombo, which is a thick, curry-like stew of lamb, pork or goat that usually contains bonaito and calabaza, Caribbean sweet potato and pumpkin, respectively. One thing has definitely made all the difference to this exotic spice mixture is toasted rice. Rice perks up the distinctiveness and full rounded toasty flavor, working as a natural thickener when used together with other aromatic spices.
