Pimentón (Spanish for paprika) is one of the essential ingredients in Spanish cooking. These sweet red peppers, indigenous to Spain, are dried over an oak burning fire for weeks to produce a sweet, smoky flavor. Unlike Hungarian-grown paprika, in which the peppers are slowly sun-dried, pimentón is slowly smoked over a fire, imparting an unbelievably rich and smokey flavor.
